The latest food trend in Japan is apparently sushi in the shape of koi carp and we love it! Koi carp symbolises good fortune and prosperity and has deep significance in Japanese culture. What better way to celebrate this national symbol by combining it with Japanese cuisine's most iconic dish?
Popularised by the Nishikizushi sushi restaurant in Saiki, this remarkable sushi is made of strips of fish such as salmon combined with other colourful ingredients including egg roll, nori sea weed and sea urchin, all covered by a semi-translucent piece of squid which has been trimmed to resemble the shape of a koi carp. It would be tempting but wrong to say this is too beautiful to eat, as the only place this koi carp is swimming is right into my mouth.
